I have a confession to make. I love sweets. I’m that girl that wants cookies for breakfast with my coffee. I’m also the one that has to have something sweet, even if it’s very small, right after (pretty much every) meal. My body craves sugar.
And Fudge? Yes, please! When I was growing up, fudge was something that my mom made for my Papa at Christmas. She always made an extra batch for home, too… but only at Christmas. I guess that made it all the more special, and is probably why I remember it so well. It wasn’t until I was much older that I figured out that fudge was sold in candy stores year round. {Gasp!}
I love this Cookies and Cream Fudge Recipe. It’s a fun change from the traditional chocolate fudge. With only five ingredients, it’s super easy to make.
It also happens to look really pretty wrapped up and tied with a bow, should you need a GIFT!
INGREDIENTS:
- 1 (8 ounce) package cream cheese, room temperature
- 4 cups confectioners’ sugar
- 1 1/2 teaspoons vanilla extract
- 15 ounces white chocolate, chopped
- 15 Chocolate Sandwich Cookies, broken into chunks
In the bowl of your mixer, beat cream cheese, sugar, and vanilla until smooth.
In the top of a double boiler (or just a glass bowl set over a pot) over lightly simmering water, heat white chocolate, stirring until melted and smooth.
Stir the melted white chocolate and 3/4 of the cookies into the cream.
Spread into a parchment lined small baking dish (8 x 8 if you have one). Press the remaining cookies into the top of the fudge to make it look pretty.
Chill in the fridge for at least 4 hours before cutting.
Slice into small squares. This stuff is rich… but oh so good!
