Main Dish Monday – Tilapia with Wine & Tomatoes

It’s been awhile since I’ve posted a new recipe, but I found this one a few weeks ago and it’s been a hit at my house ever since!  I’m not a big ‘fish’ person.  Seriously, if it tastes ‘fishy’ or if I can smell that ‘fishy’ smell, I’m not eating it.  However, I’m always looking for something different to add to the rotation, outside of my ‘rut’ of chicken and pasta dishes.  This recipe is amazing!  Give it a try… you won’t be disappointed! 

Ingredients:

4 (4 ounce) fillets tilapia
Salt and pepper to taste
4 tablespoons butter
3 cloves garlic, pressed
4 fresh basil leaves, chopped
1 large tomato, chopped (I’ve also used cherry tomatoes, as in the picture)
1 cup white wine

Directions:

Preheat a grill for medium-high heat.

Place the tilapia fillets side by side on a large piece of aluminum foil. Season each one with salt and pepper. Place one tablespoon of butter on top of each piece of fish, and sprinkle garlic, basil and tomato. Pour the wine over everything. Fold foil up around fish, and seal into a packet. Place packet on a cookie sheet for ease in transportation to and from the grill.

Place foil packet on the preheated grill, and cook for 15 minutes, or until fish flakes easily with a fork. Open the packet carefully so as not to get burned from the steam, and serve.

Enjoy!

Note: I baked mine in the oven at 425 for about 25-30 minutes, still using the foil packet.  I also sprinkled on a little lemon pepper and probably went a little heavy on the garlic!  I served mine on a bed of wilted spinach and it was SO GOOD!

    The tilapia looks delicious, i'm going to give it a try!! I hate to ask, I'm sure you hear it all the time, but, do you have one set of twins and one set of triplets?? All 5 are certainly adorable and you must have tons of fun with them!!
