I made these for breakfast this morning, and they were A-MA-ZING!!! The kids DEVOURED them, and I did a pretty good job myself. These are so easy to make, and I always have all of the ingredients on hand, other than the buttermilk. This one’s definitely one to add to my ‘repeat’ list!
4 Eggs
2 Cups Flour
1 Tsp Salt
1 Tsp Baking Soda
1 Tsp Baking Powder
2 Cups Buttermilk, divided
1 Cup Butter, Melted
In large bowl, beat eggs slightly. In separate bowl, sift together dry ingredients. Add half of dry ingredients and 1 cup buttermilk to eggs and mix with wire whisk. Follow with remaining dry ingredients and remaining buttermilk. Mix again. Add melted butter and mix until incorporated. Drop by 1/3 cupfuls onto waffle iron heated to a medium-high setting and greased with cooking spray. Re-grease after every one or two waffles cooked.
Note: I used a Belgian waffle iron, so I had to increase the recommended 1/3 cupful of batter. So light (in texture!) and fluffy… YUM!!!
